Do you have any tried and true recipes for a great Lemon cake or pie? Nothing too fancy - just simple and yummy!!

Ok, got distracted the last few days ladies....hubby's home :)

Ok...this dessert is one of my favourite, I've made it SO many times..
Layered Lemon
First layer
2 cups all purpose flour
1 cup butter or margarine
1 cup finely chopped pecans (if I don't have these on hand I don't use them and it turns out fine)
Mix flour, butter and nuts together until crumbly. Press into 9 x 13 pan. Bake in 350 degree oven for 15 minutes. Cool.
Second Layer
2 x 8 oz. cream cheese, softened
1 cup icing sugar
1 cup whipping cream (or 1 envelope topping)
Beat cheese and icing sugar together well. Beat whipping cream until stiff. Fold into cream cheese mixture. Spread over cooled crust.
Third Layer
Lemon pie filling (each makes one pie)
Prepare lemon pie filling according to directions on the package. Cook, stir often. Pour over cheese layer. (I let this chill slightly so I'm not pouring on hot filling)
Fourth Layer
2 cups whipping cream (or 2 envelopes topping)
2 Tbsp. white sugar (granulated)
1 tsp. vanilla
Beat cream, sugar and vanilla until stiff. Spread over lemon layer. Garnish with chopped pecans or slivered almonds (again, if you have them, it's fine without)
Makes 15 generous pieces
Keep chilled.

Lemon Jelly Cookies
3/4 cup butter or margarine
1 cup white sugar (granulated)
3 oz. lemon flavoured jello poweder(small box)
2 eggs
3 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
Cream butter and sugar together. Add jello powder and mix. Beat in eggs 1 at a time.
Stir flour, baking powder and salt together and add. Mix well. Roll 1/4 inch thick on lightly floured surface. Cut into 2 inch rounds. Arrange on greased baking sheet. Bake in 375 degree oven for 6-8 minutes. Makes 4 dozen.

These little goodies are awesome. You can adjust the lemon to your liking.
Lucious Lemon Bars
Crust:
1 cup margarine, softened
1/2 cup powdered sugar (icing sugar)
2 c. flour
dash of salt
Mix together and press into 9 x 13 pan. Bake at 350 degrees for 15 minutes or until lightly browned.
Filling:
4 eggs
2 cups sugar
1/2 cup flour
6 Tbsp. lemon juice
Beat ingredients together and pour onto crust; bake at 350 degrees for 25 minutes or until set. Cool; sprinkle with powdered sugar (icing sugar). Cut into small squares.(why do they say that?? :D ) Best when let set overnight.

Clear Lemon Filling
3/4 cup sugar
3 Tbsp. cornstarch
1/3 tsp. salt
1 1/2 Tbsp. lemon rind
6 Tbsp. lemon juice
1 1/2 Tbsp. butter
3/4 cup water
Mix together in saucepan. Bring to a boil and boil 1 minute, stirring contantly. Chill.
Lemon Frosting
1/2 cup butter or margarine
dash of salt
1 tsp. grated lemon rind
4 cups powdered (icing) sugar
4 tsp. lemon juice
1/3 cup milk
Cream butter, salt and rind. Add part of sugar gradually. Add remaining sugar alternately with lemon juice, then with milk until right consistency to spread.

Something really quick and easy but oh so good that I make is with angel food cake. My Mom used to make this for me every year for my birthday.
Slice an angel food cake in half. Prepare a lemon pie filling or use the one above. Spoon some of the filling onto the bottom half of the cake. Place the top of the cake back on so you know have a lemon layer in between. Prepare one envelope of Dream Whip and add the rest of the lemon filling to it and stir. Use this as an "icing" all over the cake....yummy!
I've even made up the dream whip and filling, mixed together and had it as a pudding.

This recipe was my neighbours back home, she made it all the time.
Lemon Sponge Pie
2 eggs
1 cup milk
juice and rind of 1 lemon
Butter, size of walnut
2 Tbsp. flour
pinch of salt
3/4 cup white sugar
Take 2 eggs yolks, beat and add 1/2 sugar. Add lemon, salt and butter. Mix remaining sugar and flour then add to above. Beat egg whites until stiff and then fold above mixture into egg whites. Do not beat. Pour into pie shell and cook 1/2 hour at 350 degrees.

Thanks for the recipes Heather! I make the Layered Lemon dessert and it is very good. My dad always requests this dessert when he visits. There is only one differences. My recipe uses 2 packages of lemon pudding mixed with 3 cups of milk instead of the lemon pie filling.
