With dd being on a restricted diet right now, I'm struggling to come up with things this picky child will eat. Out of the blue, she decided that she wanted sweet potato casserole (or pie). She got the casserole as it was easiest and I didn't have to worry about crust. Here is the simple recipe I used and we ate it up.
Sweet Potato Casserole
3 small sweet potatoes
2 eggs - beaten
1 cup brown sugar
1 stick butter - melted
1/3 cup milk (we use special milk but regular works the same)
1 tsp. vanilla
Cook the sweet potatoes in the oven at 425 for about 45 minutes. I wrap mine in foil and place them on a cookie sheet. Once they are cool enough to handle, peel the sweet potatoes and mash them in large bowl. Add the other ingredients and mix well. It will be runny. Pour into buttered casserole dish (I used 13x9 size) and cook at 350 for about 45 minutes. I have a gas stove so mine tends to cook a little differently than electric ones. When done, it should be slightly firm.
I would prefer to put pecans and brown sugar on top, but the rest of my house throws a fit if I do that. Maybe your family will be nice and let you.
